It
takes only a few minutes of work to prepare the sushi rice for cooking,
but requires 30 to 60 minutes of time.
It
is important to drain the rice properly because the ratios of water
to rice when cooking, are based on dry rice.
Our tip is to do this step well in advance, say before work in the
morning, and leave the rice draining over a bowl, covered with a
tea towel. You can prepare
the fillings while the rice is cooking.
If
you do not have the time to drain the rice for long, then cut back
a little on the water for cooking.

Wash the uncooked rice: This removes excess starch and polishing
agents that would make the rice gluggy. Simply put the rice in a
bowl with cold water and stir with your clean hands. You can also
scrub the grains against each other if desired.

Drain
off the water and repeat. Continue the process until the water no
longer becomes cloudy. It usually takes a few minutes.
