recommend 'Sushi Making at Home' as an authentic sushi recipe
book for both beginners and old hands at sushi making.
Explains
how to make the major varieties of sushi that Japanese make
at home themselves. No California Rolls here! Plenty of practical
home cook oriented family recipes.
Includes
recipes for `chirashi-zushi` scattered sushi,
`oshi-zushi` pressed sushi and `temaki` party
sushi, as well as special decorative types of sushi. Great

We
also highly recommend 'Sushi Taste and Technique' by Kimiko
Barber. One of the best English-language sushi books we've
seen (and purchased!). Great explanation of Japanese ingredients,
beautifully photographed step-by-step preparation of common
toppings and detailed guide to filleting a variety of fish
and shellfish.
Last
but not least, 'Sushi Modern' by much loved Sydney-based chef
Hideo Dekura. For those who like to experiment and the artistes
among us, it is truly inspirational. Still has all the basics,
but with some amazing taste combinations!
