Temaki Sushi

Temaki means 'hand roll'. Temaki sushi is made in the palm of your hand and eaten as you go. This is the kind of sushi Japanese families make at home - leaving the maki rolls and nigiri sushi to the professionals.

It makes a great fun family meal or party food. All you have to do is prepare the ingredients and let your family or guests roll their own.

Cut nori sheets to a comfortable size for your palm with kitchen scissors. Place the prepared sushi rice in the sushi rice tub on the table or buffet, together with nori sheets and a platter of fillings cut to approximately 7cm lengths.

1. Place the nori in the palm of your left hand (if you are right-handed) with the rough side facing up. Place about two spoonfuls of sushi rice on the left-hand side of the nori sheet.

2. Place fillings diagonally to the top left corner. This will be the top of the cone. If you like wasabi spread a little on the rice before adding the fillings. @

3. Hold the fillings in place with your middle fingers and take the bottom left corner of the nori sheet between your thumb and index finger. Bring the bottom corner all the way up to the top corner of the rice. 4. Try to make the two edges of the nori sheet parallel. This will ensure a nice pointy cone shape. Tuck the rolled edge in with your fingers until no rice is exposed. Wrap the remaining flap of nori around the back of the cone.

5. Now Eat!
